Description: Ground lamb and mushrooms are mixed with onions, fresh herbs and fragrant spices. The mixture is formed into kebabs and char-grilled to succulent perfection. Then served with a quick, cool herbed yogurt sauce.

Ingredients:

Lamb & Mushroom Kefta:
1 ½ pounds ground lamb
8 ounces white button mushrooms, finely chopped
1 small red onion (1/4 cup), finely chopped
2 tablespoons cilantro, finely chopped
1 teaspoon sumac
1 teaspoon ground cumin
1/4 teaspoon ground black pepper
½ teaspoon salt non-stick cooking spray, as needed

Herbed Yogurt Sauce:
1 clove garlic
1 tablespoon mint, finely chopped
1 tablespoon cilantro, finely chopped
1/4 cup baby spinach
1/4 teaspoon ground black peppercorn
Juice of half a lemon

Directions

1. Combine all ingredients for Kefta in a large bowl. Divide mixture into 4 equal parts. Form each part into 5 oblong patties.

2. Heat grill pan over medium-high heat. Coat lightly with non- stick cooking spray. Grill kefta until cooked through, about 4 minutes per side.

3. Make yogurt sauce: Combine all ingredients in a blender or food processor until smooth. Makes about 1/3 cup. *May prepare ahead of time and chill until ready to serve.
