Love tacos? Love meatballs? This recipe is a beautiful marriage of the two, and will totally transform your next taco night into something spectacular!
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 17 meatballs
5 ounces cremini mushrooms, finely chopped
2 ounces sweet onion, finely chopped
1 small jalapeño (1 ounce, leave in seeds if you prefer it spicy)
2 teaspoons olive oil
1 pound 93% lean ground turkey
1 large egg
½ cup plain bread crumbs
1 teaspoon Worcestershire
1/3 cup fresh cilantro
1 teaspoon each: onion powder, garlic powder, paprika, cumin, oregano, chili powder
½ teaspoon black pepper
1 ½ ounces shredded cheddar cheese
Salsa, for dipping
1.Heat medium saute pan over medium heat and add olive oil.
2.Add finely chopped mushrooms, onions, and jalapeño to the pan, sauteing for 4-5 minutes, until softened and slightly browned. Remove from heat and add to large mixing bowl.
3.Preheat oven to 375 degrees.
4.Add ground turkey, egg, bread crumbs, Worcestershire, cilantro, spices, and cheese to mixing bowl.
5.Gently mix all ingredients until evenly combined.
6.Form meat mixture into 2 inch balls, and place on cookie sheet lined with tin foil.
7.Cook for 30 minutes, or until meatballs are nicely browned.
8.Serve with salsa, light sour cream, and avocado or over brown rice.
